La primera la conoces de sobra. La segunda es la que te vamos a ense\u00f1ar aqu\u00ed, y te prometemos que despu\u00e9s de leer esto, jam\u00e1s volver\u00e1s a comerte un trozo de chocolate sin prestarle atenci\u00f3n.<\/p><p>No hace falta ser sumiller ni pastelero para aprender a catar. Solo necesitas un buen chocolate, un poco de curiosidad y las herramientas que te damos en este art\u00edculo.<\/p><h2>Antes de empezar: las condiciones ideales<\/h2><p>Para catar bien, el entorno importa. Lo ideal es hacerlo en un espacio sin olores fuertes (nada de caf\u00e9 reci\u00e9n hecho, perfumes ni cocina activa), con buena iluminaci\u00f3n y a temperatura ambiente de entre 18 y 22\u00b0C. El chocolate debe estar tambi\u00e9n a temperatura ambiente: si est\u00e1 demasiado fr\u00edo, los aromas no se liberan.<\/p><p>Enjuaga la boca con agua antes de empezar y entre muestras para neutralizar el paladar. Y si vas a catar varios chocolates, empieza siempre por los de menor porcentaje de cacao y avanza hacia los m\u00e1s intensos.<\/p><h2>Las 5 fases de la cata de chocolate<\/h2><h3>1. Visual: el color y el brillo<\/h3><p>Observa la tableta antes de partirla. Un buen chocolate bien atemperado tiene un color uniforme, brillante y sin manchas blanquecinas (las manchas blancas indican fat bloom, un problema de atemperado o almacenamiento). El color var\u00eda seg\u00fan el porcentaje de cacao y el origen: desde el marr\u00f3n claro hasta el marr\u00f3n casi negro.<\/p><h3>2. Auditivo: el crujido<\/h3><p>Parte la tableta. Un chocolate bien elaborado produce un crujido limpio y seco, el famoso snap. Un crujido apagado o una rotura blanda indican una cristalizaci\u00f3n deficiente o un chocolate con demasiada grasa a\u00f1adida.<\/p><h3>3. Olfativo: los aromas en nariz<\/h3><p>Acerca el trozo de chocolate a la nariz y respira profundamente. \u00bfQu\u00e9 percibes? Los chocolates de origen pueden ofrecer una gran variedad de notas arom\u00e1ticas: frutos rojos, flores, frutas tropicales, frutos secos, caf\u00e9, especias, tabaco, tierra, madera&#8230;<\/p><p>No te preocupes si al principio no identificas nada concreto. La pr\u00e1ctica entrena el olfato y con el tiempo las notas aparecen solas.<\/p><h3>4. Gustativo: lo que pasa en la boca<\/h3><p>Coloca el trozo de chocolate en la lengua y espera a que se funda sin masticar. El calor de la boca es suficiente para liberar los aromas. Presta atenci\u00f3n a:<\/p><ul><li>Fusi\u00f3n: \u00bfse funde suave y uniforme o deja residuos?<\/li><li>Acidez: \u00bfpercibes un toque \u00e1cido? Es caracter\u00edstica de muchos cacaos de Sudam\u00e9rica.<\/li><li>Amargor: presente en chocolates de alto porcentaje. \u00bfEs agradable y integrado o \u00e1spero?<\/li><li>Dulzor: \u00bfest\u00e1 equilibrado con el resto de notas?<\/li><li>Astringencia: la sensaci\u00f3n que seca la boca. En peque\u00f1as dosis es normal; en exceso indica un cacao mal fermentado.<\/li><\/ul><p>\u00a0<\/p><h3>5. Retrogusto: la despedida<\/h3><p>El retrogusto es lo que queda en la boca despu\u00e9s de tragar. En un buen chocolate, el final es largo y agradable, con las notas m\u00e1s sutiles apareciendo cuando las principales ya han desaparecido. En chocolates de menor calidad, el retrogusto es corto, graso o directamente desagradable.<\/p><h2>\u00bfC\u00f3mo describir lo que percibes?<\/h2><p>No existe un vocabulario correcto o incorrecto para catar. Lo que sientes es lo que es. Pero si quieres estructurar mejor tus notas, puedes usar la rueda de sabores del cacao, que organiza las percepciones en categor\u00edas: frutal, floral, herbal, terroso, especiado, tostado, \u00e1cido, dulce y amargo.<\/p><p>Con el tiempo desarrollar\u00e1s tu propio vocabulario y ser\u00e1 mucho m\u00e1s f\u00e1cil identificar los or\u00edgenes y los estilos de elaboraci\u00f3n que m\u00e1s te gustan.<\/p><h2>Organiza tu primera cata en casa<\/h2><p>La mejor forma de aprender es practicar con varias muestras en paralelo. Coge tres o cuatro tabletas de distinto origen o porcentaje y comp\u00e1ralas siguiendo las fases anteriores. Toma notas.
