En apenas un bocado debe haber equilibrio, sorpresa, textura y sabor. No es casualidad: hay t\u00e9cnica, criterio y oficio detr\u00e1s de cada pieza. En Exalta Chocolate hemos hecho del bomb\u00f3n nuestra se\u00f1a de identidad, y aqu\u00ed te contamos qu\u00e9 hay detr\u00e1s.<\/p>\n<h4>Los grandes tipos de bomb\u00f3n de chocolate<\/h4>\n<p>El mundo del bomb\u00f3n de chocolate es m\u00e1s diverso de lo que parece. El bomb\u00f3n moldeado se elabora en moldes de policarbonato que dan formas precisas y acabados brillantes. El bomb\u00f3n enrolado o trufa se forma a mano y se reboza en cacao en polvo, fideos de chocolate o frutos secos. El bomb\u00f3n de corte se elabora en capas sobre un marco y se corta en piezas regulares. Cada t\u00e9cnica da resultados distintos y pide habilidades espec\u00edficas.<\/p>\n<h4>Los rellenos que definen el car\u00e1cter de un bomb\u00f3n<\/h4>\n<p>El relleno es el alma del bomb\u00f3n de chocolate. La ganache \u2014mezcla de chocolate fundido y nata\u2014 es la base m\u00e1s vers\u00e1til: se puede aromatizar con especias, t\u00e9, fruta, licor o caf\u00e9 para crear perfiles infinitos. El pralin\u00e9 de frutos secos tostados aporta textura crujiente y sabor profundo. El caramelo salado a\u00f1ade contraste entre dulzor y mineralidad. En Exalta elaboramos nuestros rellenos desde cero, sin f\u00f3rmulas industriales ni aromas artificiales.<\/p>\n<h4>El temperado: la t\u00e9cnica que da brillo y chasquido<\/h4>\n<p>Un bomb\u00f3n de chocolate bien hecho debe tener brillo, ser firme al tacto y emitir un chasquido seco al partirse. Todo eso depende del temperado: el proceso por el cual el chocolate se lleva a temperaturas precisas para favorecer la cristalizaci\u00f3n correcta de la manteca de cacao. Un chocolate bien temperado tambi\u00e9n se funde limpiamente a temperatura corporal, liberando los aromas de forma gradual y elegante.<\/p>\n<h4>La cobertura: negro, con leche o blanco y su efecto en el resultado<\/h4>\n<p>La elecci\u00f3n de la cobertura del bomb\u00f3n no es solo est\u00e9tica: define el equilibrio global de la pieza. Un bomb\u00f3n de chocolate negro con relleno dulce crea tensi\u00f3n entre amargor y dulzor. Uno de chocolate con leche con relleno de pralin\u00e9 es m\u00e1s redondo y amable. El chocolate blanco \u2014t\u00e9cnicamente sin pasta de cacao\u2014 ofrece una base neutra y l\u00e1ctea que puede resultar muy elegante con rellenos \u00e1cidos o florales. En Exalta elegimos la cobertura en funci\u00f3n del relleno, no al rev\u00e9s.<\/p>\n<h4>C\u00f3mo conservar correctamente un bomb\u00f3n de chocolate artesanal<\/h4>\n<p>Los bombones artesanales son m\u00e1s delicados que los industriales precisamente porque no llevan conservantes. La temperatura ideal de conservaci\u00f3n es entre 16 y 18 grados, lejos de la luz directa y de la humedad. La nevera no es el mejor lugar: el fr\u00edo provoca condensaci\u00f3n que arruina el brillo y altera la textura.
